Tarsanas is Kir-Yianni's most serious take on Assyrtiko: a single-block white from Block #10 of the Samaropetra vineyard in Agios Panteleimonas, Amyndeon. The vines were planted in 2004 on a gentle north-west-facing slope, in poor, shallow sandy clay over limestone, and are farmed following an organic protocol.
Only the finest clusters are selected. Half are pressed as whole bunches and half destemmed, and fermentation starts in stainless steel before finishing in 225-litre French oak barrels, half of them new. The wine then ages six months in barrel on its lees. In the glass it is bright golden-yellow, with white flowers, quince, pear and mineral notes. The palate combines structure and volume with fresh acidity, well-integrated oak and a long finish.
