L'Esprit du Lac, "the spirit of the lake", is an elegant rosé made from old Xinomavro vines, at least 40 years old, grown in small parcels around Agios Panteleimonas in PDO Amyndeon. The vineyards sit at 600 metres on poor sandy soils, surrounded by lakes and mountains in one of Greece's coolest wine regions.
Bright pale salmon pink, with floral aromas, stone fruit and subtle herbal hints. The palate is fruity, with persistent stone fruit, crisp acidity and a refined, balanced finish. The grapes are pressed directly, fermented cool in stainless steel and kept on fine lees for three months.
